Spicy Peanut Soup

One thing you may not know about MnCCC's Executive Director, Lisa Meredith is that she's a Hallmark sensation! Her famous Spicy Peanut Soup was featured on the Hallmark channel's Home and Family show and in the Taste of Home magazine. This #NationalSoupDay we wanted to show off Lisa's nationally recognized recipe and give you the inside scoop on how to make a delicious recipe for yourself at home. Take a look!

Recipe

Two cups diced cooked rotisserie chicken

2 T Olive Oil

1/2 medium onion, diced

2 cloves garlic, minced

1 tsp sea salt

2 medium carrots, diced

1 large garnet yam, peeled and diced

1 bay leaf

1 sprig fresh thyme

2 T red curry paste

1/2 cup chunky peanut butter

½ c roasted, unsalted whole peanuts

4 cups chicken broth (low sodium)

1 med can (15 oz) fire roasted tomatoes (diced)

salt and pepper to taste

In large stock pot, sauté diced onions in olive oil over medium heat until onions are translucent; sprinkle with 1/2 tsp sea salt. Add garlic and sauté for 2minutes. Add diced carrot and yam.  Stir occasionally, sauté until carrot and yam just begin to soften. Add bay leaf and thyme, whole sprig, you will remove the thyme stem and bay leaf later.  Stir in red curry paste and peanut butter until they begin to melt and create a thick sauce. Add chicken and peanuts.  Stir in chicken broth and tomatoes.  Simmer for 20-30 minutes until yams and carrots are soft.  Remove thyme stem and bay leaf.  Salt & pepper to taste.
